I think it does tell about a person the choices they make for a certain extent. In Mass Effect for example, a racist person is probably less likely to cure the genophage than a non-racist person, or from a different POV, someone that thinks more with logic than emotions.
I think at end depends of how serious a person takes a game to begin with and how much they self insert.
Also, a lot of people do the good options expecting a reward, and get mad when a game makes the good option less rewarding, that also tells a lot about the person i think.
