The proper order of the quest should go:
1) Fight with Savlian (captain) the the castle gate.
2) Savlian tells you to find the guy with the key to open the gate
3) Talk to the guy with the key in the chapel, then take the back route to open the gate (this is when the imperial guard show up and start following you)
4) Open the gate and clear the courtyard with Savlian
5) Clear the throne room with Savlian
6) Savlian stays in the throneroom and tells you to look for the count.

Sounds like you skipped step 3 and broke the quest. I'd just reload a save. You can click on an npc and type "stopcombat" to get them to talk to you. If they insta aggro again then click on them, move far away from the enemy, type "moveto player" to pull them over to you, THEN type "stopcombat".

This is a shot in the dark, but that looks like the wrong type of dds file is chosen for the texture in the CK.
If I had to keep guessing it would be that your wolf model is expecting a Backlight Mask and your texture set is giving him a specular map, or vice versa, or something similar.

Open CK and load the mod that's changing the wolf
Find the "Texture Set" for the wolf. Under the "Miscellaneous" tab.
Make sure the Map is getting the dds files it expects.

You probably have 3 maps in the Texture Set. A Diffuse, a Normal/Gloss, and a Backlight Mask(This may say "Specular". It's one or the other)
Diffuse = .dds
Normal/Gloss = _n.dds
Backlight Mask = _b.dds
Specular = _s.dds
If any of these are wrong it does that to the texture. You switch between Backlight Mask & Specular by ticking the "Has model space normal map" box on the Texture Set window.
I don't recommend you make any changes besides ticking & unticking that box. If this don't work I'm tapped out.

You might consider making an MO2 mod profile that hedges very close to a vanilla game. Just to have an environment to test your creations in outside of your fully modded game that will obviously always have its own dependencies.

Have you spent time making an overly in-depth backstory for your character? Complete with goals and motivations and reasons why they're out exploring the world? I genuinely hate to break it to you after you've spent time modding the game, but there are only 2 reasons to play Skyrim in 2025:

1) You enjoy the setting and you want to play out your own stories in it.
2) You make it into a porn game.

If one of those two things isn't true for you then there are simply better games available. This ain't the one.
