The Knight's an Amalgamate between a Lightner and a Darkner, specifically (Mayoral Bodyguard) Papyrus and Dess' dust covered hockey helmet. Carol's seeking to resurrect Dess as a Darkner in the same manner as Gerson, but something clearly went wrong. Likely her helmet didn't come back as her, so Carol experimented further, perhaps in the Bunker which contains a Dark Fountain. FRIEND is also influencing Carol, likely giving her the idea that Dess can return fully if the whole world is plunged into Darkness. FRIEND is basically Satan and that which lies within Darkness beyond Darkness.
Darkness = Chaos = Freedom
The reason for Sans being an asshole to Kris is because he knows Kris is involved in all this. The unstable nature of the Knight takes a toll on Papyrus' bones when he returns to normal in the light world, perhaps becoming sick or not acting like himself. Thus, Sans has taken it upon himself to investigate this matter for the sake of his brother.
