Yes some type of slaw or pickled "salad" would be a nice addition and you could prepare it in advance. You could sell it on its own, serve it under the Schnitzel and the three sausages, and you could offer it as a topping on the brat for a dollar extra. I'm not sure how authentic it is, but you could also offer grilled peppers and onions for an additional fee. If something else that you could prepare in advance, doesn't cost a lot to make, and you really just have to keep it warm all night.

If you're planning on selling outside of bars to avoid the trouble and to offer a much needed additional service maybe it would be better to have some type of hydration or electrolyte drink on hand. Something specifically built to combat hangovers. Also I look for places that don't sell any food so people are coming out drunk and hungry. I bet you could sell those recovery drinks/ shots at a premium and people would be very interested. I know myself stumbling out of the strip club drunk as fuck at 2am would easily pay $8 of my leftover ones for some hangover remedy while waiting for my Uber. Combo that with a basic ass hotdog for $10 and you could make a fortune.
