They're not a new thing, they just kind of took a break for a while. Everyone and their grandmother had their own kart racer back in the day.

The current resurgence might be due to the fact that they're an easy genre to highlight character roster, and we're in the age of crossovers and collabs. Hence Miku and Spongebob in Sonic. It started with the MCU breaking down everyone's expectations about things not crossing over in big-budget "official" titles. Then you've got Fortnite normalizing bringing every IP ever into the game. Now EVERYONE wants to make their own "universe", and collaborate with as many outside IP's as possible because some people made a bajillion dollars by doing so.

There's a difference between a character being designed to be repulsive, and a repulsive character design. Like if I'm playing Mario and an NPC says that a goomba is disgusting and scary, that's perfectly believable despite the fact that to the player, the goombas have very cute and endearing designs. The design doesn't actually need to evoke negative reactions in me as a real life human in order to convey that they're evil, or gross, or whatever else. You've got games like Resident evil where there are zombie characters with unsettling designs intended to be scary, but the player can still look at Mr. X or Nemesis and find them as cool as they are unsettling. The designs of the Crash characters are just downright unpleasant. There's no charm that comes from utilizing unpleasant traits in creative ways. They're just ugly, gross, and irritating in every regard.

In my opinion at least. Maybe I'm the odd one out. The game is fucking fantastic, but I just hate so many of the designs for the post-warped characters.

A Crash Bash remake would suck donkey dick. The originals minigames were rage inducing, now imagine devs playing into the whole “Crash is the Dark Souls of platforming” gimmick. If anything and I still stand by this, they should remake WOC, adapt Nitro Karts Adventure Mode since the tracks are already in Nitro Fueled, and remake Twinsanity with the cut or unrealized content. I think the reason more people favored the Dingodile pairing over the N.Gin pairing (at least in the 5th gen games) is because both of them were playable and allied in Crash Bash, meanwhile N.Gin was demoted to being an obstacle.
I think the fact that the parallel of both being introduced in Crash 2, both being their side's resident tech expert including a showdown on the moon, and sharing kart stats in CTR are strong contenders.
But I think the bigger factor is just that dingodile is just cooler of a character, and a lot of players probably got the introduction to them with Warped due to the series being a best seller by that point, which disregards the prior games events in favor of the new thing. So by that metric, who better to pair with the obligatory girl character than (you): cool guy with a cool weapon and a kart that goes very fast.
It wasn't until 6th gen games that the coco x ngin pairing was pushed by devs, notably in the voice lines they recorded for CTTR. Plus the fact that the games prior treated the established bosses as disposable, rather than a part of the story. With Twinsanity feeling like all of the characters other than crash/cortex being entirely disconnected from anything at all.
