You will expect for FF7 to have a world map as every FF before had one, but you wont expect for super bosses to not only appear but to be physically on the world map too for example of a small subversion of expectations
Those games don't do it as often as tobby does, he does that kind of surprise at every chance he gets

And if they were really just "surprise" with no other thought put into them than "don't be what we expected", as "subversion" typically means when used like you use it, Deltarune would've been shit so far and shit going forward.
There are patterns. There are rules. A good story can have its general direction predicted without giving away the whole thing.
