Because it's obviously true. The only reasonable alternative to consider is Carol, and she can be ruled out pretty easily.
We spent the last four years speculating about who The Knight could be, now we have an answer, we would like to build on that foundation instead of wasting time entertaining fringe hypotheticals.

Can you explain what you think the themes of the game and why Dess Knight would conflict with them?
It seems pretty clear to me after Chapter 3 and 4 that the major thematic conflict of Deltarune is "wanting things to stay the same/go back to how they used to be/'going nowhere'" against the inevitability changing present and unstoppable future. All of the central figures in the story, heroes and villains, are motivated by this in their own way, and The Knight who is creating these fantasy worlds of a retreat into make-believe being December, a "lost girl" with thick as blood connections to the cast who has somehow returned as some shadowy ghost of the past, seems more than appropriate to me.
