They lack the force aspect a Jedi or any force sensitive has. The obvious force abilities are obvious, and the more powerful the force sensitive is the crazier those can get. But the real difference is how Jedi and Sith actually fight constantly seeing brief periods of time into the future. That's why the Jedi and Sith constantly talk about their power. They're not talking about force pushing at sonic speed. They're talking about how far they can see into the future. Most it might be a second or two. Some it might be a little farther (in the moment to moment of a battle). They always talk about having foreseen the outcome for a reason.
For a mercenary fight it stops there. Even with great skill, and tools, and armor, and weapons, they still are fighting someone that can literally see their next move.
So then you either have a highly trained non-force sensitive primed to deal specifically with force sensitives, or another force sensitive. Both understand the way to dealing with Jedi especially is messing with their emotions, erratic thoughts, etc. It's not common knowledge. Basically only a Sith would teach you how to kill jedi if you weren't a force sensitive and you'd be part of a highly specialized group with very particular training. This training could work on your young to low to average jedi. Well trained and disciplined Jedi it won't work on. It won't work on sith at all since they're trained on emotions, especially extreme ones, in the first place. The weakness of the sith that Jedi exploit are very different and even less known (sith in many timeframes are rarer).
