I've been stagnating for a while on all my lifts and I don't really know what to do.

I used to be able to bench for 225 and Squat for 285 but now they both seem significantly heavy if I get to that weight where my lifts are now at 185 bench and Squat 225. I'm a bit embarrassed. Feels like I'm never well rested or I just don't have that power or something just feels off so even at low weights I'm shaking all over the place. Never really happened before.

no, no you don't. Unless you mean do basic cardio for endurance or warming up. You have to do "practice" outside competition but you're still doing the sport. I'm not going to be a professional in any of them although I have competed in all of them at some point.
point stands, do anything other than lifting things and putting them down again 3 times a week. You'll be healthier and happier. Not as muscular though, so choose whether you want fun and health or to jerk off to yourself in the mirror.

I would start from basically beginner with 30lbs plate each side work toward 1 plate, get DOM bad for few days and slowly progress
then by the time I get to around 50-60lbs each side I usually got thin enough and get bored and quit, and get fat again
then I would start over from zero again in next 3-5 years

I been hovering from 200-240 this past decade

I think Sleep is the killer but I can't get 7+ hours of sleep anymore. Most I can do is 6+ hours. Usually it's 5x5 for Bench and OHP. (Bench is 80% ORM/OHP is 75% ORM) 3x3 for Squat and Deadlifts (Squat is 70-80% ORM/Deadlift is around 80-85% ORM). Maybe it is more protein, I'm RTO 4 days a week and trying to find a good high protein place is hard. The fucking high school kids SWARM the nearest chipotle and it sucks.
