as far as I've heard, you can do that in pretty much any FE game, to a sense. Earlier games you can get naturally lucky with a units growths and have then become a god that can solo the game, and in later games you can usually, and easily, create some sort of monster unit that solos most of the game. I think there are even playthroughs on youtube where people solo most of the newer games with the Avatar with one other person or something like that, even on the hardest difficulties. that being said, this might be something you have to go out of your way to specifically build.

you can still get some powerful units, but the Lords in both games are much more tame.
FE6 roy is infamous for turning out weaker until he gets his promotion very late game. FE7 has 3 lords, Lyn, Eliwood, and Hector, and the first two usually aren't praised for being OP, but Hector frequently turns into a beast.
>GBA FE8 is notorious for having one of the most OP units that can solo the game if you play it right, and he's the first unit you get with the Lord. You can just not use him, but it's still a fairly easy, but enjoyable game.

People tend to complain about 3H gameplay/maps being boring, but a lot of people also really enjoy the worldbuilding/characters. If you don't go out of your way to break the game, you can probably enjoy yourself just fine.
TL:DR
Lord's soloing the game or having a unit turn into a juggernaut can happen in just about every FE.
FE6/7 Lords are mostly weaker, but hector in 7 can be a powerhouse.
FE8 starts you off with one of the strongest units in the series that can solo the game.
3H supposedly you can build the lords into characters that solo the game.
