You can see the potential, but the actual bits you play through in the demo don't really highlight it at all (for me anyway). You play one of the other Digimon games and you're hooked at the start, even if it wears off quickly like in CS where the majority of the mid game is a drag. Probably the worst Digimon soundtrack so far too. Hopefully that's just because the start of the game is poorly done and the central town part isn't how all the villages will be with the awkward layout that doesn't feel like a town.

Yeah i think personalities matter for evolution AND also to get unique benefits in combat like unique traits (SP reduction, party buffs etc).
It also will matter if you want to De-digivolve back if you havent encountered the digimon yet (youd need the matching personality)
