They use the shape of the bones to determine where the muscle will go, the run it through models to see if itd even be physically possible.

Currently Tyrannosaurus is thought to be a ambush predator, fossilized tracks indicate it had fleshy pads on it's feet like an elephant and that would allow it to move surprisingly quiet, and when it's prey is just as big and they have worse senses than it, this would allow T.Rex to get in striking distance, explode out of cover and get in it's trademark bone crushing bite. Rex was essentially a land Deinosuchus. All it needed was to get in one bite and it's prey was pretty much finished and that's why it evolved such a overkill bite.

Given what birds eat, it's fine. You don't really need to chew to eat a bug or small animal whole. The whole recent era of (20 years) in Paleontology has completely destroyed the aura of Deinonychus lol. 9/10 times they'd get crushed by a leopard. Way too delicate (light hollow bones), not as dense in terms of muscle, less agile as they have a rigid tale, high profile so it would get spotted from a mile away. Honestly it's not a scary predator, closest modern equivalent in terms of hunting style would be a Komodo dragon that wounds it's prey and let's it bleed out (foot claw stab instead of infected bite). It's a glass cannon.
