I've seen the occasional Octopath thread pop up on /v/, but I avoided it due to spoilers. That said, I've now pretty much finished it, and it was tons of fun. I also chose Ochette too, OP; she's pretty fun to start with.
also I really enjoyed this game, but I did not anticipate so many negative comments towards the game. There's so many dispersed throughout the thread.

I would suggest playing 1 and then 2. 2 has QOL stuff that would make playing 2>1 feel strange. That's with the assumption you're gonna be playing both games though. There are demos for both games, where you get to play for like 3 hours. Try them out if you wish.

I had the same experience. Having to watch 8 chapter 1's, and not getting to experiment much with team comps for the early parts of the game(since each chapter 1 is self-contained), was not really fun. Once I did push through those chapter 1's though, the game opens up a lot, so there's at least that to look forward to.

Merchant is a pretty nice all-around class. Arrow of Fortune is a fast way to farm JP, and you have some self-sustain with Rest if needed. The big ones, imo, are Donate BP and Hired Help. Donate BP is a pretty good supporting skill that allows you to accelerate your party's advantage(BP is the lifeblood of combat). Hired Help is a flexible skill that can buff, debuff, break, or do damage, as long as you have enough rupees leaves. Insanely good, but you do have to spend, but then again you have Collect for more funds. Fun class.
Apothecary has some uses, but imo they are a little bit niche, yeah. It has decent application in 1v1 fights, where you can sustain yourself with Replenish Health(combine this with skills like "The Show Goes On" and "Resilience" for even more healing). Also, Poison Axe can apply poison, which deals %HP dmg, so you could poison stall fights if you want too.
