Because previously you'd have 2 sets of armor per monster (Blademater/Gunner, then Alpha/Beta, sometimes even a third set) + Male/Female versions. This was great, since armor sets would give you a general theme, then a few takes on that theme to get the exact look you'd want, while fitting the fantasy of the set. Maybe the Girros Alpha helm (Plague Doctor) didn't fit the theme you were going for were too bulky, but the Beta helm was the Leather Thief-hood you were after. Male sets were cool, female sets were cute.
Now you get 1 set of armor per monster, Male and Female versions refitted on the other. And of those options, it's massively limiting for the Male characters in particular, because all of them have fucking bras and panties (le gender neutral means mens nips are now haram too, those Garuga Panties aren't going to wear themselves if it get in). So for the 5% of non-gooner female characters that are happy they can have a huge selection of male-set knight-waifus (which they could before, just limited to certain sets) while not just playing as a man; the normal Joe Monsterhunter characters that most the vast majority of the non-terminally-online playerbase are going to run through the game practically have notably less shit to choose from, compared to what they could choose from before. But hey, at least now they don't have leddit trannies bitching that they'll tear their eyes out if they can't make their Gerudo Link cosplay with the Female Blango set on a dude.
tl;dr They sold less content, but passed it off as a good thing because gender politik
