There are really 4 gathering professions, if you include tailoring and the extra cloth drops, so any of them will work really, since they will always be in demand. For leveling probably not, turtle has more new zones and dungeons and even more with 1.18.
PVE will be the same raidlog shit at the end. Turtle is more Classic with consume stacking and 40 people (most raids having scaling besides UKH) while Epoch is TBC with bringing one of each spec for buffs and filling out the rest with meta pumpers until 25 cap, plus less consumes due to battle/guardian. pick your poison.
Custom content is a mixed bag. Turtle has more but can be janky. Epoch isn't as filled with new content as people seem to think but it's more polished.

Biggest issue with Turtle is the older engine by a country mile. See if UE5 port fixes that.

Molten Core gear is only a few levels above dungeon 60 gear and about the same as crafted 60 gear. The MC gear is maybe even a bit weak and might kill peoples drive to raidlog for 6 months but overall it helps balance the game better.

Without resilience you have joke gameplay where if there's more than 2 players on the screen shit just melts in half a second, and literally nothing matters except popping people with chain lightning/blizzard/arcanenova/engineering spam in group pvp.
