Judaism (Technically Rabbinic Judaism specifically) emerged out of Jewish reformist movements in the 1st-3rd century, same as Christianity and Gnosticism. While Christians assert a Canon Doctrine in an attempt to reconcile with the body of oral and written works of the ancient Judeans, Rabbinic Jews took a more open approach with regards to critical analysis and debate, which filters a lot of people who are used to a set religious canon that leaves its interpretation up to various church leaders, with Judaism, it's more like anyone, even Jews are open to debate and criticize the Torah. Part of the point of the Talmud is to act as a sort of scholarly reference for these debates.

They do. In fact, one of the main things they do believe in is the possibility for one to come back as a ghost from the world beyond to haunt the physical world, but not every Jew believes this, similar to how many Christian Theologians debate to what degree Annihilationism is a thing
