Define 'bloat' in your case. If it's a case of "holy fuck why the fuck is the system partition filled that much", run WizTree to analyze the volume and see its sitrep.
And with some general tips: uninstall applications that you don't use (use BCUninstaller so that it could take care of any leftovers a program's own uninstaller couldn't), run cleanmgr, clean %temp% and leftover crashdumps, et cetera et cetera. There's more of that, but these should be common steps for disk space maintenance.

Realtek is a hit or miss, depending on the ALC codec and how it's implemented in your motherboard. I'd try uninstalling the drivers first, and have DDU completely remove whatever was left of the driver
Try forcing windows' generic hd audio driver for the device, see whether the pop-ins still happen (and other potential issues), then you may try installing what Realtek provides in their site (or use the universal UAD driver from pal1000)
Ideally you should run the OEM-purposed driver with specific customizations for the "full experience", in case something doesn't work under the generic drivers, but these can be bloaty at the same time.

IIRC it can be somewhat determined based on the DEV_ part in the device's hardware ids, but I guess your regular HW utilities like AIDA or HWINFO will be more accurate.

Use regular LTSC ISO instead, and convert the edition post-install with a key change (or use the PID.txt trick in \Sources folder). Microsoft's MVS repository only provides the en-US ISO for the IoT variant.
