Most people are more inclined to play characters that share their gender. This is just instinctual because it's way more immersive. Even if there's gameplay difference, there are way more Sub Zero / Scorpion mains over Sonya Blade.
Since gaming is male dominated, there's way more people who picked male characters over female.
One of the first reason why they added female character option was for the mass appeal so the girl gamers can immerse better with the game.
