Count calories, all of them.
Eat about 500-1000 less calories than your TDEE.
Buy scales, be accurate.
Learn to cook. Try to stick to lean protein and green vegetables.
Eat a lot of protein. 0.72g per pound of goal lean body mass.
Doing cardio, even just walking, will improve your health. There is no such thing as a healthy fat heart, but you can offset the risks.
Lifting weights will keep and gain muscle mass and lose fat much quicker. Not lifting results in the body eating away muscle AND fat.
Drink more water.

Go get a kitchen scale, and put a cup onto it then zero it, then count how many sprays you need to register 1g.
For my oilve oil sprayer its 4 sprays for 1g which is like 10 (8.4) calories, so I know every 4 sprays that's ~10 calories, or I can count 2.5, 5, 7.5, 10, 12.5, 15, ... and so on as I spray.

I'm starting to get serious about weight loss again.
During covid lockdowns I ballooned up to 425lbs at 5'9"
using keto i got down to 290 around 2021 but since then i gained a fuck ton of weight again and got back up to 395. Its so fucking annoying as I don't feel like I eat that much and I get a sick feeling if I don't stuff my fat face until I feel full.
Anyway. I started just counting calories and trying to be right at 2k cals a day + putting in some miles on my under desk elliptical, at least 5-10 miles a day. Down to 382 as of this morning.
I think I can keep it up. if I can get back down to under 300, I want to try and get some kind of surgery on my stomach to shrink it. the hunger pains are terrible

It'd be pretty difficult if you're already 80kg.
Not impossible, but you'd have to diet pretty hard, and exercise is going to cause you to gain muscle at that point.
You'd probably be better off switching to a lot of working out and keeping your current diet, convert your excess fat into muscle.
80KG of fat and muscle looks better than 70KG of just skinny fat.

Oddly specific question:
I have an old analogue food scale, but id like the get a digital one for sale of accuracy
One nice feature the old scale does have though, is that you can set it so that the dish you put on it to contain food is not included into the weight, so you can use whatever container you want and measure just the food. This is more or less just a matter of convenience, so you dont have to subtract the weight of the container every single time you measure something
My question is: do modern digital food scales have a similar feature?

Sleep disturbances are very common when in a deficit. My recommendation is to eat at maintenance for a week to see if you can get some solid sleep. Then in return your body will reward you with more willpower to stay on your diet and within your calorie goals.

the point of the exercise is that if you can humble yourself enough to eat the chicken plain, then you can eat as much as you want. who the fuck can eat TWO entire rotisserie chickens? i can't. but that's only 2400 calories, and that's 100 calories under maintenance for big fat guys.

it varies by person. I don't count dip for my veggies. I buy reasonable dip and let the number come out the wash. I eat 500g of carrots and not stress about tracking the dip. If the dip is screwing me then my weight doesn't go down and I lower my daily calories. I haven't done the math, but not much is beating the calories/g on that. I'll eat 750g of peas too, just fills me up. The real killer is veggie choice. Edamame is very high calorie/g and the protein gain isn't worth it.

In HS I was taught you raise the weight when 3 sets 10 reps becomes easy and you just do 3 sets of 10 reps moving up the lightest weight(s).

I have merely become its master rather than be its slave, but ideally I do believe in the future I will restore a better relationship closer to that of friends, where I can honestly walk down the street, smell something good and entertain the idea of going inside to buy it, rather than reminding myself today is a fasting day, or that I have already eaten, or that I already have planned out my meal for the day, etc. It takes a lot of time, as far as I can tell.

Most people with diabetes people don't need their insulin. They can run high blood sugar and die of a heart attack at 50. Everyone just tells them to lose weight and they can be free. Thing is sometimes the genetic lottery says fuck you.
To me ADHD meds are the same as insulin. Yea, you should try to be stable, but your life is going to be a hell of a lot easier if you take the pill.

Do me a favor and give this a try:
Calculate when you want to wake up. It's summer still, so you can have light while waking up, that'll help. Then subtract the time you want to sleep (say 8 hours). At that time force yourself to go to bed. No excuses. In bed, you don't get to use any electronic devices, no phone, tablet or tv. Maybe the first day or so add half an hour for "calmin down" at the start.
Even if you can't fall asleep because it's early, just stay in bed and wait for sleep.
Keep any blinds open so you have light when you wake up.
At your designated wake-up time, have a loud alarm ringing and preferably somewhere you have to get out of bed to pick it up, like your phone on a chair opposite side of the room or something.
First day will suck, you'll not be able to fall asleep fast and you'll wake up tired. Tough it out and keep up the routine.
After 3 days or so it should get much easier.
If you want, the first 3-5 days of this new routine, do not work on your goals in those gained early hours, use them to enjoy yourself. Take a shower, make a fresh coffee and egg and eat them on a balcony looking outside, make it enjoyable. That'll help feeling like it's a reward, rather than something hard to do only to be able to do more hard things after.

Always. Avoid stuff that goes super hard on your joints, other than that, everything is fine.
As you get started, anything that gets your heartrate up is good, any lifting you do meanwhile is added bonus and also good. Make form your most important focus, if you can't do it with good form, lower the weight at first. You want to get used to the movement, feel as you engage the right muscles etc.
Once you have a baseline of fitness and don't get as winded from 5 minutes warm-up, you can reduce the cardio and increase the lifting.
Just remember that your main focus is the diet.
Gym speeds the weightloss up, but the war is won in the kitchen.

I've always been able to fall asleep relatively quickly, so I can't say I know how it feels, but a compromise that may work are books.
Books on electronic devices don't count, e-ink like a kindle is fine, e-ink with android is not.
Bonus points if the book is a somewhat dry subject, no fiction novel or fantasy, but either something non-fiction (I read a lot of engineering or science related shit in bed) or if that's not your world then I found many historical books to be a good slow burn. The point is for it to be engaging enough so that your anxiety stays in check, but not so engaging you want to read it in one go like a good fiction book might be.
I didn't want to write out the stuff that comes to mind, so here's a picture of some of the books I physically own.
The blackened out ones would give away too much personal information, so I had to censor those.
Other than that, green is what I'd say perfectly fits the described nieche.
Orange might or might not depending on how easily you get sucked into those books. They are oten fiction but slower burns.
Red is a no-go as those are too engaging.
Some titles are german because I'm german, so for most historical works that weren't written in english to begin with I just buy whatever is cheaper, sorry for that.
A book that I don't physically own but is decent to read, especially in the context of /fat/ is "atomic habits" too.
But more than that, a lot of these are domain specific or books that interest ME or I feel like would benefit me. Best if you look for stuff that YOU want to read, these should just give you a rough feeling for the type I am talking about.

You should look up how to make teriyaki sauce, collagen anon. Then these are easier to make. Big issue with it is the large amount of sugar, but you can probably get around that by using a heat stable sweetener and some stock for bulk. Naturally with real teriyaki sauce the sugar caramelizes and thickens the sauce, so some starch would work as a compromise probably, you'll need much less starch than sugar and would still get it to coat the protein like that.

I was at 187cm with my lowest being 85kg with no muscle mass and still quite a bit of fat on the sides and legs to go (70kg lean mass at the time), so at 182 you could probably cut another good chunk of fat. Deficit is the best course of action imhotbqh

Not really, I stepped back from the brink at 30 BMI and am a month deep into the plan.
And it's not THAT bad, I eat 1450kcal a day on average (with a good amount of protein) and lose ~1.5kg per week so my TDEE must be pushing 3000.
