As for what I'm going to change in my training next to keep progressing, since I was able to increase my squat 5 kg during this time, I won't change things a lot, I was able to bring up my quads compared to my posterior chain and I got used to the volume so I think it makes sense to increase my leg training volume mainly in my posterior chain because my quads are progressing well.
For accesories I'll keep the leg press and leg extensions, adding a few sets to the leg extensions and somewhat heavy hip thrusts.
As for my chest, shoulders and triceps I'm a bit unsure because I can't really just add volume because they are kind of beat up already with injuries I can't fully recover from, so I'll think about it, I think I'll do some 3-3-0 tempo bench press because when I did a similar bench press variant it was when I progressed from 165 with pause to 170 touch and go.

I think in this case just grinding harder might not be the solution, why don't you try to change your posterior chain training a bit with new exercises, start somewhat light, progress in them for a few months and after that go back to leg curls?

I'll just focus on targeting 2-2 muscles instead of targeting 4 at the same time. Pointing toes outwards should make it so that the long and the short head of the biceps femoris are targeted mainly. Pointing toes inwards should make it so that the semitendinosus and the semimembranosus are targeted mainly. So by doing 4 sets total, 2 focusing on the outer portion of the hamstrings, then 2 focusing on the inner portion of the hamstrings, I should stimulate it a new way I have not done before. Stiff legged deadlifts should help too so maybe I'll add those to my workout. Hamstring leans with a barbell also should work, but that lift seems like a pain in the ass.
