Knight one of the first job you get is the best tank the whole way through and remains on par in damage with all other melee jobs you get until all options open up to you, which is when you start using them with two shields as a tank and they can still deal respectable damage this way.
Monk, the first job you get, has the highest possible attack in the entire game at max level and thus the highest possible max damage potential.
White mage and black mage have to be leveled to 14 to enable spiritmaster and arcanist, you also use their skillset the entire game as a sub or as a main it literally never stops being useful.
Valkyrie, one of the water crystal jobs which is the second crystal you awaken, is a part of the most broken cheese setup in the game.
The guy is literally salty and misinforming you. The game is no different in balance or grindy nature than ff5. Another lie he is feeding you is that grinding jobs takes a long time. This is a game where you can adjust the encounter rate and it is incredibly easy to overlevel. You can grind any job you want to 9 easily by chapter 2 in florem and by chapter 5 you can max grind any job to 14 easily by abusing phlogiston and salve maker.
