For MICE it isn't about input delay anon. You should read up on it. It is all about input sync. The more times you poll the more accurate input to game is. At 1K polling rate there is HUGE amount of error for mouse tracking in-game. It just smooths out input and makes your movements do what they are supposed to in game. Check out motionsync. Now 8K polling rate on a mouse that doesn't have a sensor that can support 8K motion sync (or 4k, etc) is 100% useless I agree. The polling rate isn't for clicks, it is for mouse tracking. The issue with input error rates are astronomically higher the lower your DPI on mouse and the lower your framerate. So if you retardedly have to play at 400DPI then you damn well better be playing at 600FPS if you're using a 1K polling rate mouse. 1200/1600 DPI makes 120/240 FPS viable-ish at 1K. But the higher polling rate makes inferior framerate and gimped DPI significantly more accurate.
tl;dr you're wrong, you just don't understand the purpose (for mice) but for controller you're right, no sense in it.
