You overcooked them bro they arent supposed to fall apart like that, you also applied too much heat after the glaze as its super oxidized..... are you trying to give yourself colo-rectal cancer?
How do you cook your spareribs anyway?
I cut my racks into 4 piece sections, I dry brine mine in kosher salt, sugar, black pepper, and garlic powder for 1-2 days. Braise them at 300F for 2hrs in either beer or Angry Orchard. Then I pull them and put them on the charcoal grill for a few mins each side until browned, then I glaze them with either Famous Daves Rich n Sassy or Sweet Baby Rays thinned out with the braising liquid for easy coating, and stack them on the cold side of the grill with the holes over the meat to pull smoke over. I let the sauce sticky up and coat them, I usually double coat or triple coat them.
Thats how I do my ribs, fastest easiest best way to replicate restaurant ribs at home if you dont have a smoker or 15hrs to cook them.
