i feel like kris being a girl fits somewhat better thematically
a big part of kris is that (s)he's not a self insert, and since this would naturally include toby kris being female would fit more into this, since from what i can tell guys tend to self insert more in games like deltarune
it also makes the 'ralsei is kris' monstersona' theory more tragic, as kris would have believed that asgore and toriel would've been happier with another monster son instead of a human daughter
