Baldur's Gate 3 balanced the classes really well. Let's compare Wizard to Rogue and Fighter.

Wizard can Knock, which means you potentially don't need a Rogue to open locks. However, the Knock spell uses spell slots, which means you're weaker in the next battle.

Wizard does more damage, but a Fighter is better the longer a fight is (due to spell slots).

Making spells limited is how mages were balanced in BG3.

That's not true, actually. You chose to play Witcher 3, and that means you approve of the character you're playing as. I'm guessing you haven't played BG3, but even if you pick a pre-made character, it isn't voiced. I think that's a good thing.

I think that bug is called autism. If you can't change their armour, just keep them in what they're wearing. It's like a challenge mode.
If I look at the BG3 poster, they're wearing the armour they start with. You find much better stuff, but you're not forced to use it.

Yes, I think easy mode is fine. If a game is hard, then it's entirely possible that nobody plays it, which is what happens with /v/ and Dota 2.
If people played on easy mode, you can still talk to them about the game. It's why something like Baldur's Gate 3 is good.
