because humans aren't prey like herd animals. Predator animals sometimes hunt in groups to take down bigger predators like dogs, wolves, lions, etc. "Herd animals" are called as such because they're not a group of predators, which is called a pack

It also just doesn't make sense evolutionarily. Things like bovines or deer would be mroe likely to die if it performed behaviour like splitting from the herd to attack a predator. With their biology they wouldn't do well chasing an agile hunter and probably just single themselves out. Sure, if all the bisons charged at the wolf pack chasing them they'd probably scare them off but for that behaviour to evolve into them the prior example would have to work. And for herbivores, why bother? Herbivores don't seem to evolve offensive aspects (defensive sure) but nothing that's for chasing and killing
