Because horse racing is more akin to human cross-country, not human track. There's hills and running up or down those slopes in various directions will change how well the racer does. You can put more into a final spurt uphill so you'd be more careful with the early race while you'll gun it down a downhill and use the momentum from doing so to up your pace so your stamina can take a hit working your way up the pack. Her default is Pace Chaser but by the time she gets to the final stretch she's usually ahead of the pack already duking it out with the lead so her skill never procs. Running with close to 0 wit also increases your stamina drain and you undoubtedly got rushed further reducing your already low stamina.

You want around 900 Stam and 2 gold recovery skills to outlast the others. I'd split it between recovery and power skills and put her on medium. If you got the bad weather skills you can also pump those up, put the rest in recovery. You will probably stamina mog most players of you drop the rain doll on long runs.

I've played a bunch of gachas and a lot of them do give free daily pulls, but only in big events (half anni, anni, or a big story moment) and these usually happen every quarter year, so im more used to this kind of freebies, i can see why its bothering you, but dont worry we arent being hung out to dray, this is also how it is in JP, they dont get free pulls in every banner either.
And don't be scared of the faster pace of content, JP has a lot of dead weeks were nothing happens, thats where the time difference is made, it won't affect content or rewards, even the days we would've lost are made up in our login bonus being more generous, so dont worry.
