I'm a big fan of marinating, I once cut pieces off the bone of a pork neck and marinated it for a good 4 days before putting it over charcoal.
It was plenty spicy hot, a lil too much for me to enjoy the taste actually. But the next day the cold leftover grilled meat was so tender and flavorful and mild... ugghghghgh
If you knew how I recently lost my appetite and want to eat you'd go furious. I'm so fucking tired of my simple shit, I so crave some decent cookings.

It's fruit season now, for the first year in two years I'll go pick wild blackberries again.

I'm making char siu. I made it the other day for the first time, it was pretty good, but it could be better so I'm gonna tinker with it some more. It requires at least a full day of marinating. Loss of appetite is sort of where I'm at, only now I'm in craving mode where I only want to eat one specific thing. The last few weeks it was nothing but curry. I made and ate gallons of the stuff. If you are tired of the simple stuff start making not so simple stuff. If you want, I can give you a couple of easy recipes to follow.

What kind of garlic? And be careful when canning/jarring. You can easily mess it up and the food will become infected with botulism.

The amount aount out out by a pilot light is negligible at best, and they really only go out if they get clogged (which means they won't put out any gas) or is something is blowing dorectly on them (in which case you have biggwr issues to deal with). With an ignition stove if you accidentally bump the knob and don't realize it the gas will spew out and won't ignite since the ingition trigger wasn't activated, no chance of that happeningon a pilot light, the gas let out by an accidental bump will ignite since the pilot is there and on. Also, in general gas stoves, regardless of if they're pilot or ignition, constantly leak gas anyways.

Round 2 of trying to make char siu. I changed the sweetner from hiney to sugar. I used more sherry and mixed a splash of red wine in. I dropped the amount of five spice and added black peppercorns. I'm really unsure how they make the marinade translucent and vibrant red since the marinade has hoisin and soy sauce in it and both of those are such a dark color that they're pretty much black.
