I don't think I'd vibe well in one of those super fancy restaurants with all, like, foamed bullshit and gourmet whatever. My approach to cooking is simple dishes, simple ingredients, and being respectful of the history of what I am making. Whenever I go somewhere and I see something like tacos, or whatever other peasant food, and they're made all gourmet and expensive I become enraged.

I'm making char siu. I made it the other day for the first time, it was pretty good, but it could be better so I'm gonna tinker with it some more. It requires at least a full day of marinating. Loss of appetite is sort of where I'm at, only now I'm in craving mode where I only want to eat one specific thing. The last few weeks it was nothing but curry. I made and ate gallons of the stuff. If you are tired of the simple stuff start making not so simple stuff. If you want, I can give you a couple of easy recipes to follow.

What kind of garlic? And be careful when canning/jarring. You can easily mess it up and the food will become infected with botulism.

I love spice, I love spiciness. I can never do without it.
