the simple answer is not enough adaptations. she only barely appears in TAS and X-Men '97, has a minor role in Wolverine and the X-Men, and even her role in Apocalypse is nothing significant especially since she didn't return again. The bodyswap thing can be confusing but not if going forward they just make it Kwannon alone, or just make Betsy half-Japanese. Psylocke is mostly known among fans for Marvel vs Capcom and now Rivals (where she's neither Betsy nor Kwannon but an AU version called Sai) and there's a noticeable uptick in her recognizability now thanks to the latter. it's just a matter of her showing up more prominently in adaptations going forward as part of the core X-Men cast.
I hate Rivals gooners and the constant porn around Psylocke (especially the Vengeance skin) but I can't be mad at the whole thing making her a lot popular nowadays, I just hope it sticks and has more legs to it than just coombait and self-insert ships from Spidey/Venom fans
