The game's greatness comes from a combination of multiple factors, the "big size" of the map is the only point of comparison here. The way they utilized it, built it, stylized it, structured it and populated it, including the game mechanics themself and it's whole point.
The nature of "open world" idea is an impossibly, just like a space game. If you really want "meaningful" open world it simply impossible, so what you do is reduce it to what is manageable, and what is manageable, or rather a compromise, is exactly what you see in majority of open world games, a mostly shallow theme park. Someone like Rockstar are the only lucky and smart enough to not only have this opportunity, but to utilize it well, and that's why they along with fromsoft are the only few companies left that still making games that don't suck major dick.
