The difference between Tieflings and Drow are quite large.
Tieflings are born from the copulation between a mortal and a half-fiend of any type; birthing a Tiefling in the end. (A misconception of the realms is that it's true devils that mate with mortals that create tieflings, but this simply spawns Cambions). Tieflings have a bloodline tied to devilry, but because of their diluted devil's blood, devilry and innate evil has less of a grip on them. Tieflings mating with other tieflings will create other tieflings, and so on, but they hold no real evil.
Drow, on the other hand, are a creation by the Goddess Lolth and have been born with innate evil in them (like orcs' innate anger and hatred for elves; and the kobold's hatred for gnomes, ect.) Lolth is also very active compared to other Deities in the realms in the Underdark, where she literally appears in full avatar form during sacrificial rituals in her capital city. Drow life is a life where you get taught that it's kill or be killed. Your mom hates you, your siblings want to kill you for your position, and there are no friends. The innate divine intervention of Lolth's trials & her power over the drow makes Drows a dangerous and inherently evil race; hell, as a drow, it's very common for twins to kill the other child while still in the womb; Drow are innately evil, and they can't avoid it.

I have played with quite a few human fighters who have had no characterization whatsoever and in a lot of cases that is actually quite fine because I mostly played with rollplayers but even in a more roleplay setting I've had other race and class combinations contribute more to the roleplay than the human fighter has. If anything I would consider fighter to be a mark of someone who either isn't interested in roleplaying at all or someone who is goign to awkwardly hog all the attention but then get ignored by someone who is more naturally charismatic. I love how WotC keeps trying to not make Tieflings inherently evil, but the first group of Tieflings you come across in BG3 features a group of children who are a bunch of unabashed and unrepenting thieving little shits who are further encouraged to lie and steal by the one and only Tiefling party member in the entire game.

Having an Outsider as an ancestor doesn't guarantee you'll be evil. It might make you predisposed to certain things because of your ancestry, but it's ultimately up to you to choose. A tiefling can be born anywhere, to any culture, under any circumstances, and this all affects who they become. A tiefling could be first generation devilspawn or born to some poor family of (apparently) 100% human parents.

Drow on the other hand are all born to a supremely evil society. They are all raised in a survival-of-the-fittest world, where cruelty is a positive trait. Drow morality is so alien that their decisionmaking can be completely incomprehensible to someone who isn't a Drow (or from a similarly sociopathic culture). Most of the time when Drow try to not be evil they either get killed by their own kin or Lolth or her priestesses step in to slap them down personally. Because of this, while there *are* some good Drow, they're very rare, and any given Drow child will grow up to be evil in 99% of cases.

It wasn't the Baldur's Gate III developers who invented this, this is how the lore is on the tabletop. Although, there has been a debate on the tabletop for a long time about how much biological determinism there is in alignment. For example, originally it was a bit grey whether Orcs were always chaotic evil because that's just how Orcs are, or because Orc society is savage and raises Orc children to be evil looters, rapists, and murderers. Now it's very clearly the latter explanation.
