For the third attempt I'm going to do a better job of trimming the pork butt. Cut it to be more even throughout and trim a lot of the fat off it.

Ibalso made two different cuts. Butt and belly. The belly came out much better, but I know exactly what eent wrong with the butt. Gotta do a better job trimmkng it before I put it in the marinade. Even out the thickness and trim off a lot of that fat.

After I figure out this char siu I will then learn how to make siu yuk, crispy pork belly. It's another absolutely delicious Cantonese dish.

I alternate between chicken breast, pork neck and pork shoulder - those are seasoned separately. As for the veggies part I usually go with carrot, zucchini, white mushroom, red bell pepper and broccoli. It's a healthy mix.
Spotify did allow me to find a lot of nice songs, but like it and youtube, they require the "premium" subscription just to be able to play songs without ads and with the screen turned off. With locally stored songs, I don't have to pay anything, nor do I have to worry about needing a constant internet connection.

I don't eat much beef, only the occasional steak or some pork+beef meatballs. I like chicken the most anyway. It's lean protein, so that's what I most often go for. As for onions, I usually have raw spring onions among my salad leaves as a side with the stir fry. I like to put caramelized onions into my split pea soups.

I eat whatever I want, no concern over lean proteins or not. When it comes to beef I don't eat a lot of steak. I get big slabs of beef and cook it in such a way that it becomes nice and tender and melts in your mouth. Mostly the same with pork.
