Good afternoon. Only a couple more hours before I put the second attempt at char siu in the oven to roast. I watched multiple videos and read several recipes to see if there was a way around food coloring to achieve the vibrant red color. The answer is no.

Attempt 2. The marinade stuck better and is a lot stickier.
Taste is pretty good, pork is juicy. It's still missing something though.
For the third attempt I'm going to do a better job of trimming the pork butt. Cut it to be more even throughout and trim a lot of the fat off it.
