Thursday I am going to start training on how to make sushi. I've always wanted to learn how to make it.

I found a great way to eat left over char siu.

Boil some noodles, ramen, soba, lo mein, etc. Slice some garlic and the pork thinly and toss in a pan with some sesame oil to heat the char siu and cook the garlic. Remove those and add into the pan the cooked noodles. Also add some char siu sauce, a splash of soy sauce, some red pepper flakes, and some crispy chili oil. Cook for a minute then add the garlic back in. Toss it all a few times to make sure the garlic is evenly distributed and everything is coated. Put the noodles in a bowl, out the char siu on top, then add just a touch more soy sauce, a bit more crispy chili oil, some thinky sliced green onions, and some toasted sesame seeds.

They're quite easy, get yourself a whole onion, cut it in half, cut the root off, cut the ropt and tunic off, skin it, cut it in half width wise, remove the bulb (save that for use in other foods), then you can slice it to whatever thickness you want, then you separate the individual scales. Toss them in some seasoned flour and depending on what kind ypu want either dredge them in egg was and coat in bread crumbs or make a batter and dredge them in that. Then pop them into some boiling oil. Or you could just go buy some from a restaurant.

Ah, sushi is fantastic, as is vinegar rice. It's seasoned rice vinegar, which is very mild and slightly sweet. Fish in sushi is stored in extremely cold temperatures which kills off parasites. You should absolutely try it at some point. There are also some that they do cook. Eel for sushi is always grilled since raw eel is poisonous. Unagi (fresh water eel) is my absolute favorite and I will always always get it when it is on offer.

I have had caviar, yes. I habe had smelt, salmon, and beluga roe. Sushi stations in grocery stores tend to not make the best sushi. Generally it's substandard fish (still perfectly safe to eat), rice that isn't properly seasoned, and of course a lot of the time they make it and it just sits there for hours in the cooler (again, still safe to eat since it's kept well within the cold holding temperature). You should deffo go to a nice sushi restaurant and try it out if you can afford to. Fresh water eel is my favorite (unagi), I've only had the pleasure of trying saltwater eel (anago) once, but that was also very good. Salmon, tuna, mackrel, yellowtail, pretty much everything I've tried I have liked immensely with the exception of urchin. I tried it once and hated it. Octopus can be hit or miss. If it isn't prepared correctly then it turns into a rubbery mess. Abalone is kind of weird, not bad, but maybe don't try that one on your first time.
