They didn't feel "not real," they simply felt vulnerable. They lived entire lives filled with passion, frustration, longing, and despair. Being told they exist at the mercy of more powerful beings didn't make them feel not real just like it wouldn't make you feel not real. Verso feels not real because he's quite literally a copy of someone else and his existence has always been used to prop up someone else's feelings.

You don't choose the life you lead with a declaration. You do so over time with your actions. Her actions are those of Alicia. Maelle cared about Gustave and Emma and the apprentices. She'd probably learned to care about Sciel and Lune after their journey, and to some extent Verso by the end of act II. Maelle didn't care about Lumiere. Alicia says she does as an attempt to larp as Maelle, who she doesn't really understand, but shows her true colors by only repairing the operahouse so she can watch her brother play piano. Maelle is dead. She's depicted as a separate character. She waves goodbye to Alicia in Verso's ending like all the other dead Lumierens.
