I think the thing chapter 3 and 4 really showed is that the ride is going to be wild enough that theory crafting probably can't go too far. You can only guess at so much when there's so many potential wild-ass turns the ride can take when we're still this early on. Nothing is definitive, it's just a "and it might be this and because of that it might lead to who the fuck knows?" with nothing but a bigass question mark at the end.

Fine, here is a theory.

Dess is not the knight. Dess is sealed away. Her body or a copy of it is part of the knight along with Kris's. The Knight itself is a dark world amalgamation of monsters and a human soul - IE, Kris's soul. December was at the verge of death, and to preserve her Carol opened a dark fountain and fused her soul with a Darkner. We know it is possible because this is what Spamton wanted to do with Kris, which is how we also know December has a human soul. That and the shoes, and the specifically "shoes fitted for hooves" found in December's borrow box (with things that belong to other people such as Asriel's retainer) also point to her being human.

Additionally, Ralsei is either Asgore himself or something belonging to Asgore, who is the large person in the closet.

The Knight has Kris' soul, not December's who has been missing for exactly seven years. It is probably a goner - an object - in the dark world which has been given the soul. The SOUL is distinct from souls. It is a device that the player can control which can freely exert effects on the world. If Kris entered the dark world without the SOUL he would also become a Darkner, or another Knight.

Isn't it cool how we're exactly where we were after Chapter 2? Isn't it cool that the Knight's identity and December's whereabouts and Friend are all still the only things to talk about, just like the end of Chapter 2? Hell, Asgore is the knight. Maybe so. Maybe so.

People have speculated this since Chapter 1, but halfway through the story the game has still not even hinted that this might be the case. Chapter 2 giving The Knight's full title as "The Roaring Knight" opened the suggestion that there might be other Knights with other titles, but Chapter 3 and 4 have made it abundantly clear that The Knight is the one and only Roaring Knight.

King and Queen seem to intuitively know that The Knight is the one who opened their fountains, despite not meeting or seeing them. Jevil and Spamton, characters who inexplicably know more than they should, likewise have some unaccountable knowledge of "The Knight."
Queen is the first to identify them as "The Roaring Knight," despite not knowing who they are or even what "The Roaring" is. The way that a Darkner's knowledge and 'history' is established is somewhat unclear, but knowing that The Knight is the one who created the Cyber World fountain and that each of the fountains in some way reflects the will of their creator, it kind of makes sense that she has some unaccountable intuitive knowledge about this.
In Chapter 3, the only one to mention The Knight is Tenna, because Kris told him about them as part of their "deal." Everyone in the TV World knows Kris, because they're mostly Kris's things and Kris made the fountain.
In Chapter 4, we learn that "The Knight Which Makes With Blackened Knife" is prophesized to oppose The Heroes, reinforcing the idea that The Knight is one individual. The Church World Darkners aren't sure who The Knight is, but they know that there is a Knight.

Okay, here's a theory: why did Chapter 4 even happen? Everyone assumes it was the Knight's 2nd attempt to get Toriel, but that's because they assume she represents the Delta Rune on the shelter door. Wouldn't it make more sense for that to represent the actual pastor? Even if Toriel canceled choir practice, it's not a stretch to say Alvin was still there. I think the church fountain was actually an attempt to kidnap him, and it was mission accomplished.

I doubt "ERAM" is like, a real separate character who's only in the Chapter 3 games
I think the entity talking to Kris is almost certainly just "FRIEND." FRIEND is unusually prominent in Chapter 3 and in the Mantle boss fight specifically, and the thing talks to Kris like they're already very familiar with them, which lines up with the implication that FRIEND was somehow responsible for what happened to Kris and Dess in the forest, and most of Chapter 3's secrets being about Kris's past and Dess.
My next best guess would be that it's the counterpart Seam that's inexplicably on Asriel's computer in Chapter 4, which would kind of explain Castle Town Seam's connection to the Shadow Mantle. The drawing of Seam on Asriel's computer, the crafts supplies in Dess's room and the fact that Seam is an apparently handmade doll abandoned in the old classroom where Gerson used to teach Asriel and Dess paints the picture that Seam might have been made/owned by Dess and/or Asriel and therefore also has a connection to Kris's past. Being that they're both mysterious and vaguely sinister cat-things, this could also somehow be related to FRIEND.

These are the only two real possibilities in my mind, I can't see "ERAM" being a one-off character. It has to have more significance, if it was just a Link's Awakening reference it wouldn't raise so many questions and be treated with so much mystery that's left unresolved after getting the Shadow Mantle.

There is no good reason why Deltarune is gonna take 10+ years to fully complete, the game has some clever programming but it's fucking ridiculous it takes 2-3 years for each 1-2 hour chapter. I can only care so much for another 'this story is gonna be so good when it's finished' tease that leaves more questions than answers yet again. It's frustrating and boring, and I just find myself not caring more and more. And every year, the primitive and limited coding ability of Toby in a dogshit engine makes it seem shittier and shittier in comparison to almost any other indie game.

Silksong took 7 years but it's a massive game with tons of bosses and new abilities, and it's actually complete and long as fuck for a Metroidvania. 7 years of Deltarune is about 5 hours of basic gameplay in a 50% completed game sold almost entirely on its mystery box story, with extremely basic visuals.
