A lot of Susie's issue aren't just because she's poor but because she's a foster kid, so just having a stable home life and lifelong friends in town should be a major improvement to her confidence, even with Carol as her mother. At the same time, who knows how losing Dess would affect her, and if Kris was her best friend and still pushed her away after whatever happened she might deeply resent that. It's hard to say without knowing exactly how it happened. I can imagine her developing Berdly levels of cockiness, even like a chuuni wannabe-hero persona, to mask how she feels about not being able to save/find Dess and losing her best friend Kris at the same time.
I think poor orphaned Noelle would end up a lot like Ralsei, trying her best to be sweet and kind and keep smiling to hide how desperately lonely and powerless she feels. Then Noelle from some outside source like Friend, or even from past experience from what happened with Dess, learns how to make dark worlds and starts to do so in places she knows Kris will be or go to.
First the classroom where she and Kris used to attend Gerson's lessons. While making the fountain she drops her house key, which becomes Starwalker in the dark world. She uses the chalk to bait Alphys into sending someone to the closet and then locks them inside.
Second she tells Kris and Susie to meet her at the library, where she opens another fountain before Berdly arrives and tricks him into entering. The open closet in the computer room is likely to plant the idea that someone could hide in a closet for chapter 4. Important to note that this is the first appearance of Friend, and also the first dark world we see Noelle in. Should Noelle be the Knight, this means they always appear in the same dark world the other does.
Next, Kris opens their fountain. If Friend is like Ralsei, it can likely sense when another fountain opens. It's also possible Kris just told Noelle that they would be opening a fountain after going out the bathroom window. ERAM knows things only Noelle should know and is accompanied by Friend.
The church dark world is the most suspicious. Only someone that knew both that choir practice was cancelled and that Kris and Susie would be coming back later would be able to make that dark world safely.

You're doing something you shouldn't be able to do by exploiting an oversight in the game (the game being the dark world). The dark world is meant to be this safe place for fun adventures where nobody can get seriously hurt, but you break that by killing a bunch of enemies and then killing another player (Berdly) in real life(the light world).

They are, but it's in a fundamentally different way than in Undertale. You have three save files (incompatible with the implied 1 SOUL = 1 SAVE in Undertale) and you manage them in the meta-layer of the game which is a DEVICE set up by ______. The implication seems to be that Gaster is facilitating your SAVE files, which makes sense since he can also do things like pluck you out of the game and give you a checkpoint for the Knight fight.
Deltarune has had absolutely none of the "deja vu" and the power to SAVE being a major part of the story like it was in Undertale, the most we get is being able to somehow carry over some items across save files (and also some extremely minor differences depending on your save slot). The most acknowledgement it gets has been Ralsei nudging you to SAVE once, which is about as much as you'd expect from any typical RPG.

We get another ThornRing in the Flower World (which is how you can make the Twisted Sword without doing Snowgrave), Noelle makes a vow to You and puts the ring on Your finger, securing Kris as your new vessel.
