The Knight is the 'demon' Kris was trying to summon.
It's not actually Dess, rather it's the amalgamite fusion of Dess's dust with Kris's soul. Much like Flowey, the Knight is a confused, often times violent entity, but unlike Flowey, the Knight wasn't left ignored and abandoned. She had Kris to care for her
All she wants is to be normal again, and Kris promised to never abandon her, so now he's been roped in to a batshit insane plot that involved him getting injected with an artificial human soul created in the bunker

but the weird route requires you to do incredibly specific things to PROCEED and if you fuck up even once you're locked out of it forever unless you just reload obviously
you're actually far less free in a weird route than in a normal route where you can pick whatever dialogue option you want and not brick your run

Kris could also be an unwilling participant in Carol's scheme. In snowgrave Carol calls to tell Kris how excited Noelle is to go to the festival with him. I doubt she doesn't know what the soul is doing in that route, and wouldn't notice the thorn ring. And it really stands out compared to how fucking pissed he gets
And we also have to remember that Ralsei quietly ran some defense for the knight. If the Knight wanted to hurt people they would be very capable of doing so, they could have killed them in the TV world if they wanted. They probably aren't working to destroy the world
