Undyne is strong and tall but The Knight is like twice her size and obviously capable of manhandling her. We can only speculate about how The Knight appears as a Lightner (beyond them being "a large person") but even if they incapacitated Undyne in the Dark World before leaving, they were fit enough to sprint across town while carrying her with them. There aren't any really good candidates for this out of the Lightners we know, but the guy who is literally dying and doesn't have the stamina to stand in church would be pretty near the bottom of the list. More than any argument about the physical evidence I don't consider Rudy a serious candidate because he's simply a good guy, and the idea that he's some violent edgy shithead who's attacking and deceiving people in town and putting everyone in danger, especially his beloved daughter who he wants more than anything to just get better so he can be there for her again, would be an all-time bullshit rugpull character assassination. It's completely unnecessary when Carol is so blatantly villainous and conspiratorial with Kris and Kris clearly has a mountain of unresolved issues over what happened with Dess. There is absolutely no suggestion of any kind of malice or intrigue from Rudy at all.

Noelle and her mother are both relatively tall and slender. They also have hooves which are closer to The Knight's tapering legs than normal feet. Noelle's interaction with the Shadow Mantle implies that Dess is even taller (and that the Mantle is meant for her).
Also if your argument is The Knight (who is just a generic slender humanoid figure with antlers) doesn't look at all like Dess that's defeating the "The Knight is FRIEND possessing Dess's body/imitating Dess to freak out Kris" theories. It sure as hell doesn't look like a cat.
