It becomes a consistent grind once daily legend is in the game.
Remember that later on Legend Races will become a daily thing.
You're going to have 1 ticket per day and you can pick any previous Legend race, you get just 1 star piece but if you farm 150 star pieces, you can unlock that Uma.
This means that you can work torwards unlocking your favorites even if you flopped in their banners.

Later on old legend races become a daily feature, you can choose to race against 1 Uma per day and if you win, you get 1 star piece.
This means that you can get most Umas in 150 days, but a lot is shaved off if you already got star pieces (from the first round of Legend Races, shops, daily sales, etc)

They only do legend races once (no rerun), but old ones eventually become a daily thing where you can get one piece per day and eventually grind for old umas you don't have.

You can actually farm them daily once they implement daily legend. Plenty of events also give uma shards, and there are seasonal campaigns where you get shards from running a specific race during career.
It's just tough for now because most thing is still in year 1 QoL.
