I'm close to finishing my journey to stop being a fat shit. 5 kg left at best, 9 at worst. What's the next step for bulking? Should I eat at maintenance for some time, a week or two, to accustom my body or just straight up start eating surplus?

Man, I used to have a well-built castle in Stronghold Crusader that I used to beat my friends. I had this whole thing just like the CPU characters would where I would perfectly place buildings, towers, walls, moats into a nice little template where not a single piece of space went to waste and I had the perfect amount of population while being able to constantly pump out a specific set of soldiers. Out of all my video game shit this is genuinely the only thing I regret. That I didn't save my castle design. I tried to replicate it once many years after and I failed and just became miserable.
