Astro Bot is more polished, but simpler. Its highly linear levels keep the gameplay extremely tight. Astro Bot is more technically interesting with all the physics simulations and controller feedback. Robot flavored everything gets a bit boring though, it doesn't feel like it has as much of a soul as Mario. I love the hub world and the feedback loop of rescuing bots and growing your base is really fun.
Mario Odyssey is more creative and has more of an element of exploration as well as a wider moveset that allows for more skill expression. Mario's levels feel like little worlds that reward exploration and experimentation and there is more of a sense of "plot" and character than in Astro Bot. Odyssey lacks a good hub world, but each level sort of has hub like elements.
Both games rely on gimmick ability modification to mix up the gameplay which I'm sick of seeing in every platformer. Become a caterpillar! Become a frog that bounces high! Become a sponge that soaks up water! It just feels like a cop-out and wasn't required to make great platformers in the past.
They're both fun and beautiful platformers. I'd rather play Astro Bot if I want to just mindlessly pick up and play for 20 minutes and I'd rather play Odyssey if I want to sit down for an hour and dig in to some relaxing platforming fun.
