Yes that's annoying and too arbitrary. But I also don't like how Lies Of P for example completely streamlined side quests to the point where you cannot fail anything. I failed plenty of quests and missed out on optional content during my first DS1 run years ago and it didn't make me love it any less. I love unconventional/cryptic design but not when it dis-incentivizes and punishes exploring or has zero logic communicated to the player.

Sadly the bosses are rather uninspired, there are a couple of basic puzzle gimmick bosses but most of them are duels in empty large arenas with no level design. Most of the bosses are definitely more in the DS3/Sekiro/ER style in terms of fast pace and flashy combos, etc. but they're all fair and easy to read, they don't have insanely inflated health pools or cheap moves. I find them fun and satisfying, as pure combat encounters they're all solid, but in a generic DS3 way.
The thing people complain about the most in terms of unfairness is they can continue to string attack you during knockdown/getup, but this forces you to always prioritize healing to remain at max health in case you get caught by two hits.
But I also noticed most complainers, as usual, don't pay attention and do not engage with game mechanics, RPG systems or any kind of strategies for the bosses. They don't wear appropriate armor to counter status effects, they don't use additional health consumables or buffs, they don't use all the potential attack/defense synergies to focus on weaknesses, they never respec to try a different weapon style or try out different optional skills when different enemy types have obvious "rock paper scissor" strengths and weaknesses, they don't explore thoroughly in the first place so they miss important upgrades and tools in previous areas and come to boss under-prepared, they don't pay attention to the skill tree and how to use it optimally so their builds are shit and then they blame poor balance, etc.
