You might not know this because your brain in high on carbs but carbs that you're not burning instantly are converted to fat.
So using your 125g number, your brain would be consuming 5 carbs per hour. That means if you eat a snickers bar (~35g carbs) behind your desk, you have 30g excess carbs that get converted to fat for when you actually need carbs.
If you didn't eat that bar, your body would've simply converted some fat into glucose to fuel your brain.
So your brain is totally fine, you don't need to stuff carbs for that.
Carbs are there for when there's a high energy demand, aka excercise.
