Sure, that is true that the more sequels you have the more chance you get to get it stale.
Still, I think it would be better to make another stand alone game.
Good thing to compare it would be Supergiant and Hades 2. It is good sequel that expands on the previous game, from the developer that made better and better stand alone games over time, same as Vanillaware.
I still think that the sequel is good for what it is, but I played it for like 10 hours and I have enough, where in Hades i have 45 overall.
I think UO would get the same fate, there is simply not much to expand upon with the combat system that they already made. Sure, you can make another story but it would still be the same game.
I get where are you coming from, and rogue likes are different genre, but I would much rather have them apply what they learn to make another, even better, stand alone game, instead off confining themselves in one series
