The Knight's identity was immediately revealed when you saw this, BUT ONLY IF you are a Truck Freak who has been obsessing about this game for years. The vast majority of the game's audience, normalfags who are checking in for the new release after four years or playing for the first time with none of the additional context like the Spamton Sweepstakes shit, are not going to immediately know it.
Those people are being led to believe that Carol is The Knight, the clearly villainous reindeer lady who is definitely involved in the conspiracy and who inexplicably keeps swords and the Bunker code in her house.
Until The Knight is actually unmasked, there is still dramatic tension about their identity, and what it means for their relationship with Kris and their role in the story as a whole. The people who are obsessive enough might basically already know it, but if you care enough about the story then you ought to be more interested in the consequences of whoever The Knight turns out to be than just treating it like a whodunnit where figuring out the mystery before the author explains it to you is the end of the story.
There's no reason to blow your load immediately, that's not how you write a story. Even for less significant details like confirming the fact that monsters bleed in Deltarune, Toby wisely chose to wait until an appropriate dramatic moment at the end of Chapter 4 instead of having it just casually revealed by Susie scraping her knee in Chapter 2 (or even earlier in Chapter 4 with the cut joke about Susie sucking Noelle's blood). There's a time and place for everything in a story.
