What I propose is that "The Knight" is a parasite, perhaps using Dess as a base or perhaps not, and the "sacrifice" was basically Undyne being absorbed or parasitized in another way by The Knight. This way it can use a host, any host, to travel the light world and the Knight takes full form in the Dark World. And I think Eram is supposed to look like this parasite that can only really live on its own in the dark.
