Prions take years/decades to show up with proper "infection", but theoretically a single prion will eventually replicate enough to kill you given enough time. Considering they need extreme heat (over 1000 degrees C) to be destroyed, last forever, and are smaller than a virus, they're probably everywhere and we all have at least a few.
Either our body can destroy/flush them somehow (as far as we know, it can't), or it's simply a matter of humans not living long enough for small amounts of prions to start causing issues within their lifespan. Live to 500 though and I bet prion diseases skyrocket.
