I prefer it because I grew up in the era when flat boring Hormel pepperoni was the default.... by comparison, the smol peps were rarer, spicier, heartier, thicker with a more interesting texture. It's not just that. He had to scrape the cheese off with the spatula before it actually came off. Plus it was brought to him directly from the oven with maybe 15 seconds of rest time - obviously the cheese and sauce will not have set.
